One of the key things I look for is balance, handle and how easy it is to maintain edge across the blade. The wood handle moulds better to your hand, is naturally non-slip and doesn't give you blisters. The balance is great
And because the blade doesn't have a thick heel that goes to the handle maintenance on your blade edge is easily achieved because you can sharpen the entire blade instead of having a chunk of metal that connects to the heel of the blade making it harder to uniformly sharpen.

This chopper arrived ahead of time (during december!!). Its of very high quality and workmanship. Once unpacked, I washed it and started to take it for a test run. This is a well balanced, well made item. A bit heavy compared to a regular knife, but thats how its supposed to be.. The balance is good. I zoomed through some carrots and chicken wings. No issues at all. I have never used a cleaver before, so I am going to have to develop my technique. Even so, chopping the carrots was intuitive.
